Cool Whip Rice Cakes

This is a quick and easy snack that I like to make for myself when I’m craving something sweet or ice cream. It’s light on calories and filling to make it through the mid-afternoon before dinner. You can use multiple options when it comes to rice cakes or cool whip. I use chocolate rice cakes and vary cool whip, depending on price, between low calorie, sugar free and regular. The calorie differences between them are pretty minimal.

Ingredients:

Rice Cake – Your choice – chocolate, caramel or plain work the best

Cool whip – 1-2 tbsp per rice cake

Optional – blueberries, nuts, bananas, honey, other fruits, chocolate chips, or whatever you might like on your ice cream (Just remember, each addition adds calories but they can also add flavor, nutrients, fiber and antioxidants.

Directions – Spread 1-2 tablespoons of cool whip on a rice cake. Add the toppings you want. I like to use chopped nuts and blueberries. Enjoy!
