This is a simple, quick recipe that can be made when you want a pancake without the time that goes into making them. I make this at least once a week. You can add several different items into the mix or on top. Because I like something sweet, I will add fruits, nuts, yogurt or brown sugar to this while still eating something relatively low in calories. You can still have carbs and lose weight, it’s all about watching your calories.

Ingredients:
- 1/2 cup pancake mix (I use Kodiak for added protein)
- 1/2 cup milk (I use almond milk, but you can use whatever you prefer)
- 1 tsp cinnamon
Optional additions or toppings:
- 1/2 cup blueberries (I heat them for a minute with a tbsp of brown sugar to make a syrup)
- 1 tbsp chopped walnuts, pecans or almonds
- 1/4 cup Greek Yogurt
- Mini chocolate chips, bananas, etc. (Anything you like on a pancake, just control your portion)
Directions:
Mix the pancake mix, milk and cinnamon in a microwave safe bowl that will allow the mixture to spread to about 1/2 an inch thickness. Microwave it for two minutes on high. If there are still wet spots, then microwave at 20-30 second intervals.
Add your toppings. I spread vanilla Greek yogurt over the top and then pour the blueberry brown sugar mixture over top.
